WHAT'S FOR DINNER???

Health benefits of KALE! Get the 411 here!

Fusilli w/Caramelized Onions, Carrots & Kale in a White Wine Garlic sauce!

This pasta is easy to make, and it is super healthy and delicious!  It is loaded

with antioxidants, vitamins & minerals and TONS of fiber to fill you up and clean

1 lb Fusilli Pasta

2 Brown Onions (cut in 1/2 & thinly sliced)

1 Head of Kale (stems removed and leaves cut)

3 Carrots (peeled and diced)

1 cup dry White Wine

1 cup Vegetable Broth

1 cup parmesan grated

3 cloves Garlic

1 tbs red chili flakes

Olive Oil

Sea Salt & Pepper

 

Cook Onions in a few table spoons of olive oil in a medium-large sauce pan over low heat for 20

minutes, stirring occasionally.  Then cover pan and cook onions for another 15 minutes, stirring

once in between.  Then uncover onions and cook another 10 minutes, stirring constantly.  

Add carrots and one garlic clove whole, and cook for 

another 10 minutes, stirring a few times. Add white wine to de-glaze the pan, stirring up any brown bits

on pan. Add kale & pepper flakes and stir, then turn heat up to 

medium and cook until wine reduces. (about 10 minutes).  Boil pasta water.

Add broth to sauce and season with salt and pepper.  Cook over low heat while you cook your pasta

until it is Al Dente. (this will be under the cooking time on box).  Once pasta is cooked, add about

1/2 cup of pasta water to the sauce pan.  Drain pasta and put drained pasta back into the pot you 

boiled it in.  Stir parmesan cheese directly into the pasta (before you add sauce).  Then add sauce to the pasta and stir.

KALE CHIPS

This is such a great recipe because it is very in-expensive,

SUPER healthy & a great snack to keep around to munch on 

all day long or take with you on the go.

 

You can buy a bag of Kale Chips

from Whole Foods for $4.99 … or you can buy a bag of fresh

Kale from the salad section of Trader Joe's for $1.99 and make them

yourself!  I promise you that your much less expensive, home-made

version not only saves you $$, but tastes Sooooo much better!  

You can also play around with adding different seasonings to them

if you feel experimental ;)  Turmeric, Paprika, Lemon Pepper, Chili Powder,

Garlic Powder, the sky's the limit!  You can even add raw sugar for that

sweet & savory satisficatiction…  (personally, I'm more of a purist and 

I love them just like this!)  

 

Kale is truly a SUPERFOOD because it aids the body in detoxification,

digestion, lowering cholesterol, is an anti-inflammatory, energy-booster, 

helps fight cancer, is loaded with antioxidants and oh-so-much more!  For more

1 bag Organic Kale (from salad section)

Olive Oil

Sea Salt & Pepper

 

Pre-heat oven to 350 degrees.

 

Wash & thoroughly dry kale with paper towels.  Spread kale evenly in a single layer on a 

baking sheet.  Drizzle with olive oil (about a tablespoon or so) and toss to coat.  Sprinkle

with sea salt & pepper.  Bake for 12-14 minutes depending on oven or until lightly brown

& crispy.  Mmmmm!
